Eggs - 6
Onions - 2(Finely chopped)
Green Chillies - 5(Cut into two halves from middle)
Curry leaves - 10
Coriander leaves - To garnish
Salt - According to taste
Chilli powder - According to taste
Coriander powder - 1 tablespoon
Turmeric Powder/Haldi - 1 tablespoon
Oil - 3 tablespoon
Boil the eggs in water for 10-15 mins till the eggs get boiled properly.Peel off the outer layer and cut the egg into 4 pieces vertically and keep it aside
Take a pan and pour oil into it. Add the finely chopped onions, green chillies and curry leaves. Fry till the onions turn light brown in colour.
Add turmeric powder, coriander powder and salt as per taste.
Add the egg pieces into the pan and mix it thouroughly.
Fry for about 5 mins till the egg pieces get mixed with the masala thouroughly.
Add chilli powder as per taste and fry for another 5 mins.
Add the coriander leaves and mix so that the flavour of coriander gets mixed with the fry.
Remove the pan from heat and serve hot.
Serve with boiled rice along with rasam/sambar to enjoy the actual taste of egg fry.
