Grandma always holds a special place in everyone's heart. Coming to me, I love my grandma very much for the love and affection she has bestowed upon me over the years and it is never ending. My grandmom is the best cook I have ever seen. She does everything so perfectly that we all are left eating more than what we usually do. Recently, when my grandmom made a visit to my place, she made my favorite sweet which is called Paala Taalikalu in telugu and Rice Noodles Sweet in english. I did not want to leave this opportunity to showcase my grandmom's recipe in my blog. This recipe is very special to me as it is my grandmom's contribution to my space. Love you grandmom!


Ingredients:
  • Milk - 6 cups
  • Rice flour - One and half cup
  • Jaggery - 2-3 cups(increase/decrease depending on your taste)
  • Cardamom powder - 1 tablespoon
  • Water - 1 cup(If required)
  • Butter/Ghee - 1 tablespoon
  • Roasted nuts - handful (cashews, almonds etc.)
  • Saffron strands - Few

Preparation:

Take a bowl and add rice flour in it. Add butter along with hot milk and mix it. Make it into a loose dough and keep it aside.


Take a pan to heat and add milk in it. Allow it to boil.


Take a small quantity of rice flour dough which we prepared in between your hands and twist it to form long strings as shown below.


Keep this aside and allow it to dry till the milk comes to boil. Keep stirring the milk.
Once the milk is boiled, add the rice flour strings along with required amount of jaggery and mix gently. Let it boil for 15 minutes.


Add cardamom powder and saffron strands to the milk.


Cook for 5 more minutes and remove from heat. Add roasted nuts in the end. You can refrigerate it and serve it chilled.


Serving Options:

Serve the delicious Rice Noodles sweet with warm ghee and enjoy this delicious dessert.
