No more hunting for besan flour, when our house is stalked with sudden guests. Simple leftover dosa batter can be turned into delicious fritters within minutes. I had included one egg in this recipe to make it more tasty and healthy, which is optional. Lots of veggies can also be included in these fritters like cabbage, zucchini etc. Of course this can be served as an evening snack for kids with tomato sauce and coconut chutney. Worried about diet? No problem, just skip the "fried" part and make yummy uthapams or dosas. Try these fritters and enjoy your evening munching and chatting!!!


Ingredients:
  • Dosa Batter - One and half cup
  • Onion - 1 cup(finely chopped)
  • Carrot - One-fourth cup(grated)
  • Potato - One-fourth cup(grated)
  • Green Chillies - 3(finely chopped)
  • Coriander leaves - Handful(chopped)
  • Rawa - One-fourth cup
  • Egg - 1
  • Salt - As per taste
  • Oil - For frying

Preparation:

Take dosa batter in a bowl.


Add the chopped onions to the batter. Now add the grated carrot and chopped chillies. Add the grated potato and chopped coriander leaves. Break one egg in to the batter - veggie bowl.


Add the rawa and salt, mix well to form thick batter.


Heat oil in a pan and spoon in the batter. Fry them in batches in a medium flame.


Once fried, remove from flame and drain the excess oil in kitchen towel. Serve hot.


Variations:

Same batter can be used for preparing Idly, Dosa or Uthapam.

Serving Options:

Serve these hot fritters with tomato sauce or coconut chutney along with Tea or Coffee.
