This is a sweet my aunt used to make when ever I used to visit her. This is the easiest recipe considering that it is a payasam. Usually coconut milk is involved in doing the payasam. Here, in today’s recipe the usual drinking milk is used. That is why I find this Sabudana payasam very easy to prepare.


Ingredients:
  • Sabudana / Sago - Half cup
  • Sugar - Half cup
  • Cashew pieces - Few
  • Raisins - Few
  • Cardamom - Few
  • Cloves - Few
  • Water - 1 cup
  • Milk - 1 cup
  • Ghee - Two and half teaspoons

Preparation:

In a pan, add half spoon ghee and fry all of the cashew pieces, raisins, cardamom and cloves for about a minute. Keep it aside for now.


Add 2 teaspoons of ghee to the pan and fry the sabudana balls till they turn golden brown. You will find that they bloat a little in their size due to frying.


Add some water to the fried sabudana and allow it to boil for some time. Keep stirring, else all of the sabudana will get stuck to the pan.


Once these sabudana balls are half boiled (you can see them slowly turning into transparent balls), add milk and allow to boil completely. Along with the milk add sugar too. Sabudana balls when fully boiled will turn completely colorless. Finaly add all the fried cashew, raisins, cardamom and cloves.


There you are done with Sabudana Payasam.


Serving Options:

Serve the payasam hot with some drops of ghee added on top.
