. You must definitely check out her blog to find some wonderful writings. I completely enjoy going through her posts. She is here to share with us one of the healthy salads which is Yam and Chickepea salad made in the moroccan style. Check it out and pour in your comments.



Ingredients:

Yam - 1 (Medium, peeled and cut into half inch cubes)
Green bell pepper - 1 (small and diced)
Chickpeas - 1 can (drained well, rinsed well and drained well again)
Cherry tomatoes - 8-10(Each quartered)
Green Onions - 2 (Thinly sliced)

For dressing:

Lemon juice - 3 tablespoons
Olive oil - 3 tablespoons
Ground cumin - 1 tablespoon
Ground paprika - 1 tablespoon
Cayenne pepper - One-fourth tablespoon
Garlic clove - 1 (large and minced)
Salt - As per taste
Pepper - As per taste

Preparation:

Mix yam, green bell pepper, chickpeas, cherry tomatoes and green onions.
Before serving pour dressing ingredients and enjoy the salad.


Serving Options:

When ready to serve pour dressing into salad and serve.
