It was raining at my place since a week and every evening I was looking to prepare some or the other snack item. I want to share the recipe of one such snack Medhu Vada, which is quite famous in Southern India.

Ingredients:

Urad dal - 250 grams
Onion - 1 (Finely chopped)
Coriander Leaves - 1 bunch
Salt - As per taste
Oil - To fry
Green Chillies - 3(Finely chopped into small pieces)
Soda Salt - Half tablespoon

Preparation:

Take a bowl and soak urad dal for approximately 8 hours.
Make a paste out of it using a blender.
To this paste, add onions, coriander leaves, salt, green chillies, soda salt, 1 tablespoon of heated oil and mix them well.
Take a pan to heat and add oil to it.
Take a wet cloth and sprinkle water on it.
Take the paste and try making it into donut shape by placing it on the wet cloth.
Remove it and add it to the heated oil. Fry till its cooked and it turns into the colour shown in the picture.
Drain excess oil and the medhu vada is ready.

Serving Options:

Serve hot with ginger chutney and enjoy the snack.
