I am truly honored to be the ambassador of CK Mondavi and Family Wines. Not only I get to taste these exceptional quality wines but also know more about the CK Mondavi and Family heritage. The best thing which makes me want more of CK Mondavi and Family wines is that the grapes are crushed, blended and bottled at their own family-owned winemaking facility. Being a California resident myself, I prefer these wines created from Prime California vineyards in St. Helena, CA in the Napa Valley.

This Spring I received 3 wines from CK Mondavi and Family - Chardonnay, Red Blend and Sauvignon Blanc. All of them tasted great when paired in the right way. Today I am going to prepare Spicy Chicken Curry and pair it with Chardonnay from CK Mondavi and Family. Check it out!

Spicy Chicken Curry Recipe

Spicy Chicken Curry Recipe

Ingredients List:
  • Chicken - 250 grams
  • Onions - 1 (finely chopped)
  • Tomatoes - 2 (finely chopped)
  • Ginger-garlic paste - 2 teaspoons
  • Lemon Juice - 1 tablespoon
  • Yogurt - 1 teaspoon
  • Curry leaves - 5 leaves
  • Coriander leaves - 1 handful (finely chopped)
  • Turmeric powder - Half teaspoon
  • Salt - As per taste
  • Red Chili Powder - As needed
  • Oil - 1.5 tablespoons
Masala ingredients:
  • Dry Red Chilies - 3-4
  • Cumin seeds - 1 teaspoon
  • Cinnamon - 2 sticks
  • Cloves - 3
  • Black pepper - 1 teaspoon
  • Cardamom powder - 1 teaspoon
  • Fennel seeds - 1 teaspoon
  • Grated coconut - 4 teaspoons

Preparation:

Let's start with the preparation of masala for the chicken curry. Take a pan and roast all the ingredients till they turn light brown. Keep a check on them and make sure they are not burnt. Once done, remove and grind the ingredients into a fine paste. If needed, add some water. Keep the masala aside.
Clean the chicken with water. Then add turmeric powder, ginger-garlic paste, salt, lemon juice, yogurt, red chili powder and mix well. Allow it to marinate for half an hour.
Heat the oil in a pressure cooker and add onions. Fry them till they turn golden brown. Add the tomatoes along with marinated chicken and mix well. Pressure cook for 3 whistles and switch off.
Take a pan to heat and transfer the ingredients into it. Then add the masala paste. Mix well and add some water. Cover and cook for 10-15 minutes. Once done add curry leaves and coriander leaves.
Spicy Chicken Curry is now ready to be served.

Serving Suggestion:

Serve the delicious Spicy Chicken Curry with steamed rice. You can even relish it with roti or naan. It tastes heavenly!

According to me the best pairing for CK Mondavi and Family Chardonnay is chicken. Especially spicy chicken curry and rice combination when paired with Chardonnay is perfection. Taste it to know it!
