Andhra region in India is famous for its yummy and tasty chutneys. The best way to taste a chutney is to have it with hot steamed ghee rice. It tastes heavenly. You can also have these as sides with Indian breakfast items like dosa, idli, uttapam etc. I am going to share Bottle Gourd Tomato Chutney which is one of my favorites. Bottle Gourd is rarely used at my place but whenever I buy it, I try to make this chutney.


Ingredients:
  • Bottle Gourd - 1(medium sized, chopped)
  • Green Chillies - 10 / As per taste
  • Tamarind - Lemon sized ball
  • Tomatoes - 1(chopped)
  • Salt - As per taste
  • Coriander leaves - Handful
  • Cumin Seeds - 1 teaspoon
  • Mustard Seeds - 1 teaspoon
  • Chana Dal - 1 teaspoon
  • Oil - 2 tablespoon

Preparation:

Take a pan to heat and add 1 tablespoon of oil to it. Add the bottle gourd, green chillies and tamarind. Cook for 10 minutes.


Add tomatoes and cook for another 10-15 minutes till its cooked properly.


Once done remove from heat and allow it to cool.
Once cooled, take them in a blender and add salt to it. Blend them to get the chutney.


Take a pan to heat and add a tablespoon of oil. Add chana dal, mustard seeds and cumin seeds. Wait till they pop and add chopped coriander leaves. Add this to the chutney and mix.
The delicious and mouth-watering Bottle Gourd Tomato Chutney is now ready to be served.


Serving Options:

The best option to serve this chutney is hot steamed ghee rice. Nothing can beat this!
