Sweet & Sour Bitter Gourd Fry

- Bitter Gourd - 5(medium size)
- Salt - As per taste
- Oil - 2 teaspoons
- Onions - 1(finely chopped)
- Green Chillies - 2(finely chopped)
- Turmeric powder - Half teaspoon
- Red Chili powder - 2 teaspoons
- Jaggery - 2 teaspoons
- Tamarind paste - 1 teaspoon
- Coriander leaves - Few(To garnish)
Peel the outer layer of bitter gourd and cut them into circular pieces. You can skip the peeling parting if you wish to but I would suggest to go for it.
Add salt to these pieces and mix well. Keep them aside for atleast an hour.
Take a pan to heat and add oil to it. Add onions and green chillies and fry for 2-3 minutes. Also add turmeric powder and mix.
Squeeze excess water from the bitter gourd pieces and add them along with tamarind paste.
Close it with a lid and cook for 10 minutes till the pieces turn soft. Add red chili powder and fry the pieces for another 2 minutes.
Finally add the jaggery pieces and mix. The jaggery gets dissolved quickly. So, fry for another 2 minutes, garnish with coriander leaves and remove from heat.
