- Cooked Rice - 2 cups
- Carrots - 2(medium size)
- Peas - 1 cup
- Beetroot - 1(small)
- Potatoes - 2(small)
- Onions - 2(sliced)
- Green Chilies - 2(slit lengthwise)
- Mint leaves - Handful
- Coriander leaves - Handful
- Garam masala - One and half teaspoon
- Ginger-garlic paste - 1 teaspoon
- Salt - As per taste
- Oil - 3 teaspoons
Chop and keep all the veggies ready.
Cook the carrots on slow flame for 10 min.
For boiling potatoes, peas and beetroot I used the steamer part of rice cooker and steamed them. This way the peas and beetroot dont loose their natural colour and the potatoes don't turn mushy too.
Add oil in a wok. Also add ginger-garlic paste, onions, green chilies, mint leaves and coriander leaves. Fry them till the onions turn light pink.
Add the half cooked veggies, salt and mix well.
Add the garam masala powder and give a quick stir. Add it to the cooked rice, mix lightly and check for salt. Add fresh and finely chopped coriander leaves to the rice. The delicious vegetable fried rice is ready to be served.
Serve with any side dish of your choice. Simple onion-curd-coriander raita will go very well with this mild fried rice.
