Basamati Rice - 2 cups
Water - 4 cups
Carrot - 2 (Cut into circular pieces)
Potato - 1 (Cut into fine cubes)
Capsicum - 1 (Cut in small pieces)
Cauliflower - 6 flowers
Beans - 7 (Cut into small pieces)
Onions - 1 (Finely chopped)
Green Chillies - 4 (Cut vertically into two halves)
Bay Leaf/ Biryani Patta - 1
Cardamom/Elaichi - 3
Cinnamon/Dalchini - 2
Ginger-garlic paste - 1 tablespoon
Cashewnuts - Add as per your preference
Salt - According to taste
Oil - 3 tablespoons
Ingredients for pulao masala:
Bay Leaf/Biryani Patta - 3
Red Chilli Powder - 1 tablespoon
Cumin powder - 1 tablespoon
Corainder Powder - 1 tablespoon
Cinnamon Sticks - 4
Cloves - 8
Turmeric/Haldi - Half tablespoon
Take a pressure cooker and pour oil into it. Add bay leaf, cinnamon and elachi and cook for 2 mins.
Add onions and green chillies and cook for 5 mins.
Add all the vegetables(carrot, potato, capsicum, cauliflower and beans). Cook for 5 mins.
Add salt, ginger-garlic paste and pulao masala powder(Take a mixer and add all pulao masala ingredients and prepare a powder) and mix well.
Add rice to this and combine. Cook for 2 mins and add water.
Pressure cook for 3 whistles. Remove from heat and keep it aside.
Roast the cashewnuts separately and add it to the vegetable pulao.
The vegetable pulao is ready and you can garnish as per your choice.
Serve hot vegetable pulao with chill raita. It's gonna be yummy.
