Rainbow Chip Cake
Eggs - 4
Baking Powder - 1 tablespoon
Rainbow Chips - 1 cup
Powdered White Sugar - 2 cups
Butter - 2 cubes/sticks (large)
Vanilla Extract - 2 tablespoon
Milk - 1 cup
All-purpose Flour/Maida - 2 cups
Corn-flour - Half cup
Salt - Half tablespoon
Preheat the oven to 175 degrees C(350 degrees F ). Take a 9 inch square pan. Grease it with butter and then flour it. You can also go for 9 inch cup cakes pan if you want to have it as cup cakes.
Take a bowl and add all-purpose flour, corn-flour, baking powder and salt.
Add the eggs one after the other and keep stirring. Also add milk, butter and sugar.
Beat the mixture properly so that no lumps are found. You can also use an electric mixer for this purpose.
Add the vanilla extract and mix the batter again to make sure the batter is smooth.
At last, add the rainbow chips and mix well. The batter looks really colourful and you will love it :).
Pour this batter evenly in the pan and bake for 30 minutes in the preheated oven.
Check if the cake is baked well by using a toothpick. Cool for sometime and you have the colourful and scrumptious rainbow chip cake which is gonna tickle your tastebuds. Kids are going to love it for sure :)
You can add the whipped cream of vanilla flavour if you wish. I prefer not to add it as I feel the actual taste of rainbow chips comes without whipped cream :).
