I used to prepare egg fried rice by adding soya sauce, tomato sauce and garam masala powder to eggs until I learnt this recipe from my mother's friend. She made this delicious egg rice when she visited us with such ease that I started following her recipe since then This recipe is very easy and flavourful.


Ingredients:
  • Eggs - 3
  • Cooked rice - 2 cups
  • Ginger-garlic paste - 1 teaspoon
  • Coriander powder- 1.5 teaspoon
  • Coconut pieces - 3
  • Cloves- 4
  • Cinnamon - 1 inch piece
  • Coriander leaves - Half bunch
  • Mint leaves- Half bunch
  • Onions - 3
  • Green Chillies - 3
  • Salt - As per taste
  • Oil - 2 teaspoons

Preparation:

Powder cinnamon and cloves in a blender. Add the coconut pieces and coriander powder and grind again. Heat oil in a pan, add the ground powder and fry for half a minute carefully without burning, add the ginger garlic paste and fry for another half a minute.


Add finely sliced onions, slit green chillies, coriander leaves, mint leaves and fry till onions turn light brown.


Break the eggs one by one. Keep undisturbed for a minute and then scramble them.


Add precooked rice to the egg mixture, add salt to taste and fry the rice for 3 minutes.
The delicious egg rice is now ready to be served.


Serving options:

Garnish the egg rice with choppped coriander leaves and serve with onion raita.
