I have tried all kinds of dal varities but I was thinking why not have all my favourite vegetables and try out a new varitey of dal. And I did succeed in it. As it has good amount of vegetables, it can be termed as a healthy food too. You can cook the same for small kids by varying few things as per their requirement. So here I am with my newly tried recipe Mixed Vegetable Dal Fry.

Ingredients:

Tomatoes - 1(Finely chopped)
Onions - 1(Finely chopped)
Bottle Gourd - 1(small size chopped after peeling off)
Green Chillies - 4(Finely chopped)
Carrot - 1(Finely chopped after peeling off)
Tindora - 4(Finely chopped)
Toor dal - 2 cup
Mustard Seeds - 1 tablespoon
Cumin Seeds - 1 tablespoon
Urad dal - 1 tablespoon
Chana dal - 1 tablespoon
Turmeric Powder - 1 tablespoon
Tamarind pulp - 2 tablespoons
Curry Leaves - 5
Salt - As per taste
Red Chilli Powder - 1 tablespoon/As per taste
Coriander leaves - Half bunch
Oil - 2 tablespoons

Preparation:

Take a pressure cooker to heat and one tablespoon of oil to it. Add onions and curry leaves and fry for 5 mins.

Add tamarind pulp, carrot, tomatoes, tindora and bottle gourd along with salt. Pressure cook for 3 whistles.

Once done, take the cooked vegetables and keep them aside.

Wash the toor dal and add a cup of water to it. Pressure cook the toor dal separately for 3 whistles. Once cooked smash it to form a paste.

Take a pan to heat and add one tablespoon of oil to it. Add mustard seeds, cumin seeds, urad dal and chana dal and wait till they pop.

Add the cooked vegetables and toor dal paste and mix well. Check for the taste of salt and add red chilli powder.

Cook for 5 mins and add coriander leaves and mix. Remove from heat and serve hot.

Serving Options:

Serve it with hot steamed rice or as a side dish for any rice recipe.
