Hyderabadi Bagara Rice

Intro:

I am a Hyderabadi and I love Hyderabadi food. Whenever any function or event takes place in Hyderabad, the food is something which you can drool over. That is Hyderabad speciality. With the history of Nizams, this place is famous for its food. There are many famous recipes out here for which this place is famous. Most of them are non-vegetarian delicacies. But, there are few vegetarian dishes as well which are super tasty. Bagara Rice is a simple recipe which can be considered as a replacement when you do not have enough time to make biryani/pulao. Lets have a look at the simple procedure for making Hyderabadi Bagara rice.

Ingredients:
  • Basmati rice - 2 cups
  • Water - three and half cups
  • Oil - 3 tablespoons
  • Bay Leaf - 2
  • Cinnamon - 4
  • Cardamom - 3
  • Onions - 1(finely chopped)
  • Green Chillies - 2(finely chopped)
  • Mint leaves - handful
  • Curry leaves - 6
  • Salt - As per taste
  • Coriander powder - Half teaspoon
  • Garam masala powder - Half teaspoon
  • Ginger-garlic paste - 1 tablespoon
  • Red Chilli powder - Half teaspoon

Preparation:

Take a pressure cooker to heat and add oil to it. Add bay leaf, cinnamon, cardamom, onions and green chillies. Fry till the onions turn light brown in color.

Add mint leaves, curry leaves, salt, coriander powder, garam masala powder and ginger-garlic paste. Mix well and cook for 5 mins.

Add the basmati rice and mix well so that the masala gets coated to the rice.

Add red chilli powder along with water. Cook for 5 mins. Then pressure cook it for 4 whistles.

Once done, remove from heat and serve hot.

Serving Options:

Serve the Hyderabadi Bagara Rice with any chicken curry or mutton curry for non-vegetarians and paneer curry for vegetarians. Have it along with raita and enjoy its delicacy.
