Baby Potato Fry (Write For Us Contest Entry - 32)
Baby Potato Fry is a simple and flavorful fry which goes well with rice varieties.
- Baby Potatoes - 15-20
- Onion - 1 (big, chopped)
- Curry leaves - Handful
- Red Chilli Powder - 1 teaspoon
- Turmeric powder - Half teaspoon
- Pepper powder - 1 teaspoon
- Dry Ginger powder - 1 teaspoon
- Salt - As per taste
- Oil - 1 tablespoon
Wash and pressure cook the baby potatoes. Peel them and keep aside.
Grind the chopped onion to a fine paste. Heat oil in a pan and add the curry leaves followed by the onion paste.
Fry till the raw smell goes off and the color changes. Add the boiled potatoes to the onion mixture and mix well.
Now add all the powders(turmeric, chilli, dry ginger, pepper and salt).
Mix well and add little water. Simmer and cook till it becomes dry.
Add little extra oil to make it more crispier. Remove from flame and serve hot.
Baby Potato Fry is a perfect side dish with all rice varities like Sambhar rice, curd rice, Rasam rice, Lemon rice etc.
