She is here to share one of the Kerala special dish 'Cabbage Thoran'. Thoran is a Kerala-style stir fry dish loaded with grated coconut and veggies of your choice. You can add vegetables like cabbage (both green and purple), beans, beetroot, carrot, and even green-leafy vegetables like spinach and fenugreek leaves. Her mom, sometimes, prepares green peas thoran and drumstick thoran. The procedure is more or less similar for each of these veggies. So, just add different veggies and you are good to go with a new side dish. So, here we go with the recipe for cabbage thoran.
Cabbage - 2 cups(shredded)
Onion - 1(small and finely chopped)
Green chilies 3-4(sliced)
Grated coconut - Half cup
Turmeric powder - One-fourth teaspoon
Curry leaves - 1 sprig
Garlic - 1(grated)
Oil - 1 tablespoon(preferably coconut oil)
Mustard seeds - Half teaspoon
Salt - To taste
Heat oil in a wok and splutter mustard seeds. Add chopped onions and green chilies. Saute them.
When onions turn translucent, add shredded cabbage and curry leaves. Mix well. Cover and let it cook at low flame.
Meanwhile, in a bowl mix grated coconut, turmeric pwd, and grated garlic. Mix well.
When the cabbage turns tender, add the coconut mixture, and mix well. Add salt as per taste.
Cover the lid and let it cook for another few minutes. Remove from heat. Adjust salt, if required.
The delicious cabbage thoran is ready.
Serve it with hot rice and sambhar or dal.
