Puran poli or Bobbatlu or Obbattu or Holige is a delicious sweet dish which is prepared for festivals and special occasions in India. In Andhra Pradesh, this sweet is made for most of the festivals like Vinayaka Chavithi, Diwali, Dussehra, Ugadi, Sankranthi etc. You can also call it as sweet pan-fried flat bread which is made using all-purpose flour, chana dal, jaggery and lots of ghee. You can serve it with either cream or ghee. It tastes heavenly. Though it takes good amount of time to prepare this dish, once it is done, you will relish every bit of it.


Ingredients:
  • Chana dal - One and half cup
  • Jaggery - One and half cup
  • All purpose flour - 4 cups
  • Turmeric powder - A pinch
  • Salt - Half teaspoon
  • Ghee - As required
  • Oil - As required
  • Water - To prepare the dough
  • Cardamom powder - 2 teaspoons

Preparation:

Prepare a soft dough using all-purpose flour, turmeric powder, a tablespoon of ghee, salt and water. Dip the entire dough in oil and keep it aside for 3 hours.


Pressure cook the chana dal for 3-4 whistles till it turns soft. Make it into a fine paste.


Take a pan to heat and add the chana dal paste in it. Add powdered jaggery along with cardamom powder and keep stirring till it gets a smooth consistency.
Once done, allow it to cool and make it into small sized balls and keep it aside.


Now remove the dough from oil and make lemon sized balls. Press the dough flat and place the chana dal jaggery mix ball in the middle as shown. Make it into a round ball by getting the corners together using your fingers.


Gently press the dough with your hand and spread it like a chapati.


Take a pan to heat and grease it with ghee. Roast the poli on both the sides by adding ghee. Once done, remove from heat and serve.


Serving Options:

Serve the delicious Puran Poli with ghee or cream. It tastes yummy.
